Monday morning, rain is falling!
Easy peasy brunch. Pan grilled pink salmon, ratatouille & Kiwi lemon punch.
A bowl of soup would’ve been better, but this one’s quite an easy pull off and keto-friendly.
Tip: When cooking salmon you need to cook it with skin-side up first so that the salmon fillet will stay intact, and won’t flake unlike when skin-side down. This will also yield lovely grill marks like so.😉

So what is Ratatouille aside from being a popular children movie?
Ratatouille is a well-known vegetable stew hailing from Provence, a region in France famous for the bounty of its produce. It’s no surprise then that this stew is a celebration of hard-working farmers and the fruits of their labor.
