I intend to use fresh salted egg, like I used to, but unfortunately I broke two of the fresh salted eggs which apparently turned out spoiled after two weeks from purchase, so I had to resort using instant salted egg mix.They sell good quality salted eggs here where yolks are soft and mustard yellow. Eggs are not overcooked.

Adding milk when cooking salted egg will enhance the flavor and it will coat the chicken well. It doesn’t actually stay creamy until after served yet the chicken was still moist. Plus adding the fresh curry leaves makes the dish more authentic.
