Filipino Food – Pork Isaw

Pork Isaw (Pork Innards)
Not for the faint hearted.

I wanted to put these in skewers to grill, but that means I’d have to put a deposit of S$100 so I can use the barbecue grill down at our recreation area. So I decided to just fry them like so.

So the HOW TO?

  • First,you need to clean the pork intestines thoroughly then boil it in lemongrass & ginger to get rid of any unwanted smell or taste.
  • Slice the innards about an inch then season with cumin, turmeric, salt cayenne pepper, soy sauce and a bit of brown sugar.
  • Tip: When marinating, use ziplocks to ensure that the flavors are absorbed evenly.
  • Leave it overnight.
  • Then fry.

What’s isaw without a dip? So I prepared the usual soy sauce-vinegar- sugar-garlic & chilli.

So perfect for pulutan, I guarantee you. Well sinceI don’t drink, a fizzing Mountain Dew would suffice.
